Chef Karter’s Sweet Potato Pancakes
Sweet Potato Filling:
This can also make 1 Sweet Potato Pie. You can adjust the sugar according to your taste.
- Cook the sweet potato. The potato can be boiled or baked on 350 (1.5 hours) or until done. Remove hull, mash and beat to remove strings.
- In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
- Add 1 to 1.5 cups of the sweet potato mixture to your pancake mixture.
- Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
