Karter’s Sweet Potato Pancakes

Chef Karter’s Sweet Potato Pancakes
 

Homemade Pancakes:

  • 1 ½ cups all-purpose flour
  • 3 ½ teaspoons baking powder
  • ¼ teaspoon salt, or more to taste
  • 2 tablespoon white sugar
  • 1 ¼ cups milk
  • 1 egg
  • 3 tablespoons butter, melted

Sweet Potato Filling:

  • 1 Large Sweet Potato
  • 1/4 Cup Sugar
  • 1/4 Cup Brown Sugar
  • 1 TSP Vanilla
  • 1 Egg
  • 1/4 TSP Nutmeg
  • 1/2 TSP Cinnamon
  • 4 TBSP Butter
  • 1/4 Cup Evaporated Milk

    This can also make 1 Sweet Potato Pie. You can adjust the sugar according to your taste.

    Directions:

    1. Cook the sweet potato. The potato can be boiled or baked on 350 (1.5 hours) or until done. Remove hull, mash and beat to remove strings.
    2. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
    3. Add 1 to 1.5 cups of the sweet potato mixture to your pancake mixture.
    4. Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
